Ingredients
- 1 quart cooked farro or wheat berries or quinoa
- 1/2 cup rough chopped mint
- 1/2 cup rough chopped basil
- 1 cup sweet 100 tomatoes or heirloom tomatoes, cut in quarters
- juice from 3-4 Meyer lemons
- 2 tbsps extra virgin olive oil
- 1 tsp kosher salt
- cracked black pepper
- 3/4 cup toasted almonds /pistachios/ or pumpkin seeds
- 1 tsp chili flakes
- 1/2 cup shaved Sartori Sarvecchio/or aged cows milk cheese
Directions
Toss all ingredients together and serve!
